6 large eggs

1 cup fresh spinach, chopped

1/2 cup crumbled feta cheese

1/4 cup milk (or plant-based milk)

1/4 cup diced bell pepper (red or green)

1/4 cup finely chopped onion

1/2 teaspoon garlic powder

1/4 teaspoon black pepper

1/4 teaspoon salt

1/4 teaspoon dried oregano

1/4 teaspoon red pepper flakes (optional, for a bit of heat)

Cooking spray or olive oil for greasing the muffin tin

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C). Grease a muffin tin thoroughly with cooking spray or a brush of olive oil to prevent sticking.

    Whisk Eggs: In a large mixing bowl, crack the eggs and whisk them until they are well combined. Add milk, garlic powder, black pepper, salt, oregano, and red pepper flakes (if using) to the eggs and whisk again until smooth.

      Prepare Vegetables: In a separate bowl, mix together the chopped spinach, diced bell pepper, onion, and crumbled feta cheese. Ensure the spinach is well chopped so that it integrates nicely into the muffins.

        Combine Mixtures: Gently fold the vegetable and feta mixture into the egg mixture. Stir until everything is evenly distributed.

          Fill Muffin Tin: Using a ladle or measuring cup, pour the egg and vegetable mixture into the prepared muffin tin, filling each cup about 3/4 full. This will allow room for expansion as they bake.
