Savory Shrimp Tacos with Avocado Lime Sauce

1 pound large shrimp, peeled and deveined

1 teaspoon chili powder

1 teaspoon cumin

1/2 teaspoon smoked paprika

1/4 teaspoon black pepper

Juice of 1 lime

For the Avocado Lime Sauce:

1 ripe avocado

1/2 cup Greek yogurt (or sour cream)

Juice of 1 lime

1 garlic clove, minced

Salt and pepper to taste

2 tablespoons fresh cilantro, chopped

For Serving:

8 small corn or flour tortillas

1 cup red cabbage, shredded

1/2 cup cherry tomatoes, halved

1/4 cup red onion, thinly sliced

Fresh lime wedges and additional cilantro for garnish

Prepare the Shrimp: In a medium bowl, combine olive oil, chili powder, cumin, smoked paprika, garlic powder, salt, black pepper, and lime juice. Add the shrimp and toss until they are evenly coated. Let them marinate for about 15-20 minutes.

    Make the Avocado Lime Sauce: While the shrimp is marinating, prepare the sauce. In a food processor or blender, combine the avocado, Greek yogurt, lime juice, minced garlic, salt, and pepper. Blend until smooth and creamy. Stir in the chopped cilantro and adjust seasoning to taste.

      Cook the Shrimp: Heat a non-stick skillet over medium-high heat. Once hot, add the marinated shrimp in a single layer. Cook for 2-3 minutes on one side until they start to turn pink, then flip and cook for an additional 2-3 minutes until cooked through. Remove from heat.
