Savory Shrimp Fried Rice with Peas

1 pound large shrimp, peeled and deveined

2 cups cooked jasmine rice (preferably day-old)

1 cup frozen peas

3 tablespoons soy sauce

2 tablespoons oyster sauce (optional)

2 tablespoons sesame oil

2 tablespoons vegetable oil

3 cloves garlic, minced

1 small onion, diced

2 green onions, sliced (white and green parts separated)

2 large eggs, beaten

1 teaspoon fresh ginger, minced

Salt and black pepper to taste

Fresh cilantro for garnish (optional)

Lime wedges for serving (optional)

Instructions
 

Prepare the Ingredients: Ensure your shrimp are cleaned and deveined. Use day-old rice for better texture as it’s drier.

    Heat the Wok: In a large wok or skillet, heat 1 tablespoon of vegetable oil over medium-high heat. Add the shrimp and season lightly with salt and pepper. Sauté for about 2-3 minutes until the shrimp turn pink and opaque. Remove them from the wok and set aside.

      Sauté Aromatics: In the same wok, add another tablespoon of vegetable oil. Sauté the diced onion and minced garlic for about 2 minutes or until fragrant and translucent. Add the minced ginger and cook for an additional minute.

        Add Peas & Eggs: Stir in the frozen peas and cook for another 2 minutes until they are heated through. Push the mixture to one side of the wok and pour the beaten eggs into the other side. Scramble the eggs until fully cooked and combine everything together.

          Incorporate Rice: Add the cooked jasmine rice to the wok. Use a spatula to break up any clumps. Combine everything well, making sure the rice is mixed with the egg, veggies, and shrimps.

            Season the Rice: Drizzle the soy sauce and oyster sauce (if using) over the rice. Add the sesame oil and mix thoroughly to ensure all the rice is coated evenly. Stir-fry everything together for another 2-3 minutes. Adjust seasoning with more salt, pepper, or soy sauce to taste.

              Finish with Green Onions: Lastly, add the sliced green onion (white parts) and give it a final toss to mix. Remove from heat.

                Garnish and Serve: Serve the savory shrimp fried rice hot, garnished with the green parts of the green onions and fresh cilantro if desired. Provide lime wedges on the side for an added squeeze of acidity.
