Ingredients

1 pound large shrimp, peeled and deveined

2 medium zucchinis, sliced into half-moons

1 red bell pepper, sliced

1 cup snap peas

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

3 tablespoons soy sauce

1 tablespoon sesame oil

1 tablespoon olive oil

1 teaspoon cornstarch mixed with 2 tablespoons water (optional, for thickening)

Salt and pepper to taste

2 green onions, chopped (for garnish)

1 tablespoon sesame seeds (for garnish)

Cooked jasmine rice or quinoa, for serving

Instructions

Prepare the Ingredients: Start by preparing all the vegetables and shrimp. Ensure the shrimp is well cleaned and deveined. Slice the zucchinis, bell pepper, and snap peas, and set them aside.

Heat the Pan: In a large skillet or wok, heat the olive oil over medium-high heat. Make sure the pan is hot before adding any ingredients.

Cook the Shrimp: Add the shrimp to the pan in a single layer. Season lightly with salt and pepper. Cook for about 2-3 minutes on one side until they turn pink, then flip and cook for another 1-2 minutes. Remove the shrimp from the pan and set aside.

Sauté the Vegetables: In the same pan, add the minced garlic and grated ginger. Stir-fry for about 30 seconds until fragrant, ensuring not to burn it. Then, add the zucchini, bell pepper, and snap peas. Stir-fry for about 4-5 minutes until the vegetables are tender yet crisp.

Combine Everything: Return the cooked shrimp to the pan with the sautéed vegetables. Pour in the soy sauce and sesame oil. If you'd like a thicker sauce, add the cornstarch mixture and stir well to combine and allow the sauce to thicken slightly. Stir everything together for an additional 1-2 minutes.

Final Touches: Taste and adjust seasoning if necessary. Remove from heat and sprinkle with chopped green onions and sesame seeds for added flavor and garnish.

Serve: Serve the savory shrimp and zucchini stir-fry over a bowl of warm jasmine rice or quinoa for a complete meal. Enjoy your delightful dish!
