1 pound breakfast sausage (pork or turkey)

8 large eggs

2 cups milk (whole or 2%)

1 cup shredded cheddar cheese

1 cup diced bell peppers (mixed colors)

1 cup diced onion

4 cups stale bread (cubed, French or Italian works best)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

1 tablespoon olive oil (or butter for greasing)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with olive oil or butter.

    Cook the Sausage: In a large skillet over medium heat, cook the breakfast sausage until browned and fully cooked, breaking it apart with a spatula. Drain any excess grease and set aside.

      Sauté Vegetables: In the same skillet, add the diced onions and bell peppers to the remaining sausage drippings. Sauté until the vegetables are tender, about 5–7 minutes. Remove from heat and let cool slightly.

        Whisk Eggs and Seasonings: In a large mixing bowl, whisk together the eggs and milk. Stir in garlic powder, onion powder, smoked paprika, salt, and pepper.

          Combine Ingredients: In the prepared baking dish, layer the cubed stale bread evenly across the bottom. Top the bread with the cooked sausage, sautéed vegetables, and shredded cheddar cheese. Pour the egg mixture evenly over everything.

            Let it Set: Gently toss the ingredients in the dish to ensure that the bread cubes soak up the egg mixture. Let the casserole sit for 10–15 minutes to allow the bread to absorb the eggs.

              Bake the Casserole: Place the casserole in the preheated oven and bake for 35–45 minutes, or until the center is set and a toothpick inserted comes out clean. The top should be golden and slightly puffed.

                Garnish and Serve: Once baked, remove the casserole from the oven. Let it cool for 5 minutes before slicing. Garnish with fresh chopped parsley and serve warm.
