1 pound breakfast sausage (mild or spicy, based on preference)

6 large eggs

2 cups milk (or dairy alternative)

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon paprika

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

4 cups cubed bread (such as French or sourdough)

1 cup shredded sharp cheddar cheese

1 cup diced bell peppers (red, yellow, or green)

1/2 cup chopped green onions (for garnish)

Optional: hot sauce for serving

Instructions
 

Preheat the oven to 350°F (175°C). Grease a 9x13 inch casserole dish with cooking spray or butter.

    Cook the sausage: In a large skillet over medium heat, add the breakfast sausage. Cook until browned and fully cooked, breaking it into small pieces as it cooks. Drain excess fat and set aside.

      Whisk the egg mixture: In a large mixing bowl, whisk together the eggs, milk, salt, black pepper, paprika, garlic powder, and onion powder until well combined.

        Combine the ingredients: In the prepared casserole dish, layer the cubed bread evenly. Sprinkle the cooked sausage over the bread, followed by the diced bell peppers and half of the shredded cheese. Pour the egg mixture evenly over all the layers, making sure it saturates the bread.

          Rest the casserole: Allow the mixture to sit for at least 10-15 minutes, giving the bread time to soak up the egg mixture.

            Bake: Place the casserole in the preheated oven and bake for 40-45 minutes, or until the eggs are set and the top is golden brown. During the last 10 minutes of baking, sprinkle the remaining cheese on top to melt.

              Garnish and serve: Remove the casserole from the oven and let it cool for a few minutes. Top with chopped green onions for a fresh crunch. Serve warm, with hot sauce on the side if desired.
