2 cups cooked and mashed pumpkin (fresh or canned)

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 cup breadcrumbs (plus extra for coating)

1/4 cup finely chopped green onions

1 clove garlic, minced

1/2 teaspoon ground nutmeg

1/2 teaspoon smoked paprika

Salt and pepper to taste

1 egg, beaten

Vegetable oil for frying

Prepare the Mixture: In a large bowl, combine the mashed pumpkin, mozzarella cheese, Parmesan cheese, breadcrumbs, green onions, minced garlic, nutmeg, smoked paprika, salt, and pepper. Mix until all ingredients are well incorporated.
