1 cup polenta (coarse cornmeal)

4 cups vegetable broth

1/2 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon dried basil

1 teaspoon garlic powder

Salt and pepper to taste

1 cup cherry tomatoes, halved

1 small red onion, diced

2 cups fresh spinach (or any leafy green)

Fresh basil leaves for garnish (optional)

Instructions
 

Roast the Tomatoes: Preheat your oven to 400°F (200°C). Spread the halved cherry tomatoes and diced red onion onto a baking sheet, drizzle with olive oil, and season with salt and pepper. Toss to coat and roast in the oven for about 20-25 minutes, or until caramelized and tender.

    Cook the Polenta: In a large saucepan, bring the vegetable broth to a boil. Gradually whisk in the polenta, stirring constantly to avoid lumps. Lower the heat and cook for about 15-20 minutes, stirring frequently until the polenta is thick and creamy.

      Add Flavor: Stir in the grated Parmesan cheese, dried oregano, dried basil, garlic powder, and additional salt and pepper to taste. Remove from heat and let it sit for a few minutes to thicken further.

        Layer the Bake: In a greased 9x9 inch baking dish, spread half of the cooked polenta at the bottom. Next, layer the roasted tomatoes, red onion, and fresh spinach evenly over the polenta. Pour the remaining polenta on top, smoothing it out with a spatula.

          Bake the Polenta: Place the assembled dish in the oven and bake for an additional 15-20 minutes, allowing the top to firm up and start to crisp slightly.
