2 large zucchini, spiralized (or 4-5 medium zucchini, depending on size)

1 pound boneless, skinless chicken breasts, cut into bite-sized pieces

2 tablespoons olive oil

3 cloves garlic, minced

1 cup heavy cream

1 cup freshly grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)

Optional: Red pepper flakes (for heat)

Prepare the Zucchini: Start by spiralizing the zucchini to create noodles. If you don’t have a spiralizer, you can use a vegetable peeler to create thin strips. Pat the zucchini noodles dry with a paper towel to remove excess moisture, which helps avoid sogginess. Set aside.

    Cook the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces, seasoning them with salt, black pepper, and a sprinkle of Italian seasoning. Cook for about 6-8 minutes, or until the chicken is golden brown and cooked through. Remove the chicken from the skillet and set aside.

      Create the Alfredo Sauce: In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for about 1 minute until fragrant (careful not to burn). Pour in the heavy cream and bring to a simmer, stirring constantly. Once simmering, reduce heat to low and gradually whisk in the Parmesan cheese until melted and smooth. Continue to stir until the sauce thickens, about 3-4 minutes.

        Combine Ingredients: Add the cooked chicken back into the skillet with the Alfredo sauce. Gently toss in the zucchini noodles, coating them well with the creamy sauce. Cook for an additional 2-3 minutes – just long enough for the noodles to warm up but still retain a slight crunch.
