2 cups butternut squash, peeled and diced

1 tablespoon olive oil

Salt and pepper, to taste

1 teaspoon garlic powder

1 teaspoon onion powder

1 cup heavy cream

1 cup vegetable broth

1 teaspoon nutmeg

½ cup grated Parmesan cheese, plus more for topping

1 tablespoon fresh sage, chopped (or 1 teaspoon dried sage)

2 cups penne pasta, uncooked

1 cup mozzarella cheese, shredded

Optional garnish: Fresh parsley, for serving

Preheat Oven: Preheat your oven to 375°F (190°C).

    Roast Butternut Squash: In a large mixing bowl, toss the diced butternut squash with olive oil, salt, pepper, garlic powder, and onion powder. Spread evenly on a baking sheet and roast in the preheated oven for about 25-30 minutes, or until tender and slightly caramelized.

      Prepare Alfredo Sauce: In a saucepan over medium heat, combine the heavy cream and vegetable broth. Stir in nutmeg, and simmer gently for about 5 minutes, allowing it to thicken slightly. Add in the grated Parmesan cheese and chopped sage, stirring until the cheese is melted and smooth.

        Cook Pasta: While the squash is roasting, bring a large pot of salted water to a boil. Cook the penne pasta according to package directions until al dente. Drain the pasta and set aside.

          Combine Ingredients: In a large mixing bowl, combine the roasted butternut squash, cooked penne pasta, and Alfredo sauce. Mix until the pasta and squash are well coated in the sauce.

            Assemble the Bake: Transfer the pasta and squash mixture into a greased 9x13 inch baking dish. Sprinkle the shredded mozzarella cheese evenly over the top, followed by additional grated Parmesan cheese for extra flavor.
