Savory Baked Salmon with Sweet Potato Mash

For the Baked Salmon:

4 salmon fillets (6 oz each)

2 tablespoons olive oil

2 teaspoons fresh dill, chopped

1 lemon (zested and juiced)

2 cloves garlic, minced

Salt and pepper to taste

For the Sweet Potato Mash:

2 large sweet potatoes, peeled and cubed

2 tablespoons butter

1/4 cup milk (or cream for richer flavor)

Salt and pepper to taste

1/2 teaspoon ground cinnamon (optional)

For Garnishing:

Fresh dill or parsley, chopped

Lemon wedges

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare the Salmon: In a small bowl, mix together the olive oil, fresh dill, lemon zest, lemon juice, minced garlic, salt, and pepper. Rub this mixture over the salmon fillets evenly.

      Bake the Salmon: Place the seasoned salmon fillets on the prepared baking sheet and bake for 12-15 minutes, or until the salmon flakes easily with a fork and is cooked through.

        Cook the Sweet Potatoes: While the salmon is baking, place the sweet potato cubes in a large pot and cover with water. Bring to a boil and cook for about 15-20 minutes, or until tender.

          Mash the Sweet Potatoes: Drain the sweet potatoes and return them to the pot. Add butter, milk (or cream), salt, pepper, and ground cinnamon if using. Mash until smooth and creamy.

            Serve: Plate the sweet potato mash on each serving plate, top it with the baked salmon, and garnish with freshly chopped dill or parsley. Serve with lemon wedges on the side.
