Rosemary Sea Salt Pretzel Bites

1 ½ cups warm water (110°F to 115°F)

1 packet active dry yeast (2 ¼ tsp)

1 tbsp granulated sugar

4 cups all-purpose flour

1 tsp salt

¼ cup baking soda

Coarse sea salt, for sprinkling

2 tbsp fresh rosemary, finely chopped (or 1 tbsp dried rosemary)

1 large egg, beaten (for egg wash)

1 tbsp melted butter (optional, for brushing)

Instructions
 

Activate the Yeast: In a mixing bowl, combine the warm water, sugar, and yeast. Allow it to sit for about 5-10 minutes or until foamy. This indicates the yeast is activated.

    Make the Dough: In a large mixing bowl, combine the flour, salt, and chopped rosemary. Gradually add the yeast mixture to the flour, mixing until a dough forms. Transfer the dough to a lightly floured surface and knead for about 5-7 minutes until smooth and elastic.

      Let it Rise: Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1 hour, or until it doubles in size.

        Prepare the Baking Soda Bath: In a large pot, bring 4 cups of water and the baking soda to a boil over medium heat.

          Shape the Pretzel Bites: Once the dough has risen, punch it down and divide it into eight equal pieces. Roll each piece into a long rope, about ½ inch thick. Cut each rope into 1-inch pieces to form the pretzel bites.

            Boil the Bites: Carefully drop a few pretzel bites into the boiling baking soda bath for about 30 seconds. Using a slotted spoon, remove them from the water and place them on a parchment-lined baking sheet.

              Egg Wash: Brush each pretzel bite with the beaten egg for a shiny finish, and sprinkle coarse sea salt on top.

                Bake: Preheat your oven to 450°F (232°C). Bake the pretzel bites for 12-15 minutes or until golden brown.
