1 medium zucchini, diced

1 red bell pepper, diced

1 yellow bell pepper, diced

1 red onion, sliced

2 cups cherry tomatoes, halved

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon cumin

1/2 teaspoon garlic powder

1/2 teaspoon chili powder

Salt and pepper to taste

8 corn tortillas

1 cup crumbled feta cheese

1 avocado, sliced

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Prepare the Vegetables: In a large mixing bowl, combine the diced zucchini, red bell pepper, yellow bell pepper, red onion, and cherry tomatoes.

      Season the Veggies: Drizzle the olive oil over the vegetables and sprinkle the smoked paprika, cumin, garlic powder, chili powder, salt, and pepper. Toss everything together until the veggies are evenly coated.

        Roast the Vegetables: Spread the seasoned vegetables evenly on a large baking sheet. Roast in the preheated oven for 20-25 minutes, or until they are tender and slightly caramelized, stirring halfway through.

          Warm the Tortillas: While the veggies are roasting, warm the corn tortillas. You can do this in a dry skillet over medium heat for about 30 seconds on each side or wrap them in foil and heat in the oven for 5 minutes.
