Roasted Garlic & Spinach Ricotta Lasagna Rolls

Ingredients
  

9 lasagna noodles

1 head of garlic

2 tablespoons olive oil

3 cups fresh spinach, chopped

1 cup ricotta cheese

1 cup mozzarella cheese, shredded (plus more for topping)

1/2 cup grated Parmesan cheese

1 large egg

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

2 cups marinara sauce

Fresh basil leaves, for garnish (optional)

Instructions
 

Roast the Garlic:

    - Preheat your oven to 400°F (200°C).

      - Slice the top of the garlic head off to expose the cloves. Drizzle with 1 tablespoon of olive oil and wrap in aluminum foil. Roast for 30-35 minutes, until soft and fragrant. Let cool, then squeeze the roasted garlic cloves into a bowl and mash with a fork.

        Prepare the Spinach Filling:

          - While the garlic is roasting, bring a large pot of salted water to a boil. Cook the lasagna noodles according to package instructions until al dente. Drain and set aside.

            - In a large skillet, heat the remaining 1 tablespoon of olive oil over medium heat. Add the chopped spinach and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.

              Mix the Cheese Filling:

                - In a mixing bowl, combine the mashed roasted garlic, ricotta cheese, half of the mozzarella cheese, grated Parmesan cheese, egg, dried oregano, salt, and black pepper. Stir until well blended. Finally, fold in the cooked spinach.

                  Assemble the Lasagna Rolls:

                    - Spread 1 cup of marinara sauce evenly on the bottom of a 9x13 inch baking dish.

                      - Lay a lasagna noodle flat on a clean surface. Place about 2-3 tablespoons of the cheese and spinach mixture at one end of the noodle and roll it up tightly. Place the roll seam-side down in the baking dish. Repeat with the remaining noodles and filling.

                        Top and Bake:

                          - Pour the remaining marinara sauce over the lasagna rolls and sprinkle with the remaining mozzarella cheese.

                            - Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.

                              Serve:

                                - Once baked, let the lasagna rolls cool for a few minutes before serving. Garnish with fresh basil leaves if desired.
