1 whole head of garlic

2 tablespoons olive oil, plus more for drizzling

1 pound cremini mushrooms, sliced

1 teaspoon fresh thyme leaves

1 teaspoon fresh rosemary, chopped

Salt and pepper, to taste

8 ounces store-bought flatbread (or homemade)

1 cup ricotta cheese

1/2 cup grated Parmesan cheese

1/4 cup fresh parsley, chopped

Red pepper flakes (optional, for garnish)

Instructions
 

Roast the Garlic: Preheat your oven to 400°F (200°C). Slice the top off the whole head of garlic to expose the tops of the cloves. Drizzle with olive oil and wrap it in aluminum foil. Roast for about 30-35 minutes until the cloves are soft and golden. Let it cool, then squeeze the roasted garlic into a small bowl and mash it into a paste.

    Sauté the Mushrooms: In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sliced cremini mushrooms, thyme, rosemary, salt, and pepper. Sauté for about 8-10 minutes, or until the mushrooms are browned and tender. Remove from heat and set aside.

      Prepare the Flatbreads: Place the flatbreads on a baking sheet. Spread the roasted garlic paste evenly over each flatbread, leaving a small border around the edges.

        Add Cheeses and Toppings: Dollop spoonfuls of ricotta cheese on top of the garlic spread. Then scatter the sautéed mushrooms over the ricotta. Sprinkle the grated Parmesan cheese evenly on top.

          Bake: Drizzle a little olive oil over the flatbreads and place them in the preheated oven. Bake for 12-15 minutes or until the edges are crispy and the cheese is melted.

            Garnish and Serve: Once out of the oven, allow the flatbreads to cool slightly. Top with fresh parsley and, if desired, a sprinkle of red pepper flakes for some heat. Slice into wedges and serve warm.
