1 cup fresh corn kernels (or frozen)

1 tablespoon olive oil

1 teaspoon smoked paprika

1 tablespoon fresh lime juice

1 teaspoon honey (optional)

4 slices of whole-grain bread

1 small red onion, thinly sliced

Fresh cilantro or parsley for garnish

Crushed red pepper flakes (optional, for heat)

    Roast the corn: In a bowl, toss the fresh corn kernels with olive oil, smoked paprika, salt, and pepper.
