2 medium acorn squashes

4 tablespoons olive oil

4 tablespoons pure maple syrup

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 cup pecans, chopped (optional for garnish)

Fresh parsley or thyme (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Squash: Slice the acorn squashes in half lengthwise. Scoop out the seeds using a spoon, and slice a small piece off the bottom of each half to prevent them from wobbling (be careful not to cut through the flesh).

      Mix the Glaze: In a small bowl, whisk together the olive oil, maple syrup, cinnamon, nutmeg, salt, and black pepper until combined.

        Coat the Squash: Place the acorn squash halves cut-side up on the prepared baking sheet. Brush the glaze generously over the flesh of each half, allowing it to seep into the cavity.
