Ingredients
  

2 cups cooked rice (preferably day-old)

1/2 cup breadcrumbs (plus extra for coating)

1/4 cup grated Parmesan cheese

2 tablespoons fresh parsley, finely chopped

2 tablespoons fresh cilantro, finely chopped

1 tablespoon fresh chives, chopped

1 clove garlic, minced

1 small onion, finely chopped

1 egg

1 teaspoon paprika

Salt and pepper to taste

3 tablespoons olive oil (for frying)

Optional: 1/4 cup shredded mozzarella for a cheesy center

Instructions
 

Prep the Mixture:

    In a large mixing bowl, combine the cooked rice, breadcrumbs, Parmesan cheese, parsley, cilantro, chives, minced garlic, and chopped onion. Mix until well combined.

      Add the Binding:

        Crack the egg into the mixture. Add paprika, salt, and pepper to taste. Mix everything together until the ingredients are uniformly blended. If you’re using mozzarella, fold it into the mixture at this point.

          Form the Patties:

            With wet hands (to prevent sticking), take a portion of the mixture and shape it into a patty, about 3 inches in diameter and 1/2 inch thick. Repeat this process until you’ve used all the mixture. You should have around 8-10 patties.

              Coat the Patties:

                Place some breadcrumbs in a shallow dish. Gently press each patty into the breadcrumbs on both sides to coat evenly.

                  Heat the Oil:

                    In a large skillet, heat the olive oil over medium heat. You want enough oil to cover the bottom of the skillet, but not too much that they’ll fry instead of pan-fry.

                      Cook the Patties:

                        Once the oil is hot, add the patties in batches (do not overcrowd the pan). Fry for about 4-5 minutes on each side or until they are golden brown and crispy. Adjust the heat if necessary to prevent burning.

                          Drain Excess Oil:

                            Once cooked, transfer the patties to a plate lined with paper towels to drain any excess oil.

                              Serve:

                                Serve the crispy rice patties warm, garnished with extra herbs if desired. They pair wonderfully with a yogurt dip, salsa, or a simple salad on the side.
