1 lb ground turkey

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 bell pepper (red or green), diced

1 packet taco seasoning (or homemade: 1 tsp chili powder, 1 tsp cumin, 1 tsp paprika, ½ tsp onion powder, ½ tsp garlic powder, salt, and pepper to taste)

1 can (15 oz) black beans, rinsed and drained

1 cup corn (fresh, frozen, or canned; drained)

1 head of romaine lettuce or butter lettuce (for wraps)

1 cup diced tomatoes

1 avocado, sliced

½ cup shredded cheese (cheddar or Mexican blend)

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Sauté the Base: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion is translucent, about 2-3 minutes.

    Cook the Turkey: Add the ground turkey to the skillet. Break it up with a spatula and cook until no longer pink, about 5-7 minutes.

      Flavor It Up: Stir in the diced bell pepper and taco seasoning. If using homemade seasoning, add the spices at this stage. Mix well and sauté for another 3-4 minutes until the bell pepper is tender.
