Ingredients

2 cups leftover turkey, shredded

1 cup cooked brown rice or quinoa

1 cup roasted vegetables (carrots, Brussels sprouts, or sweet potatoes)

½ cup cranberry sauce

¼ cup chopped fresh parsley or cilantro

1 teaspoon olive oil

Salt and pepper to taste

½ teaspoon garlic powder

½ teaspoon onion powder

Optional: ¼ cup shredded cheese (cheddar or gouda), for topping

Optional: Sliced avocado, for garnish

Instructions

Prep the Ingredients: Start by shredding your leftover turkey if not already done. Measure out the cooked brown rice or quinoa and set aside.

Heat the Turkey: In a medium skillet, heat the olive oil over medium heat. Add the shredded turkey along with garlic powder, onion powder, salt, and pepper. Stir gently and cook for about 3-5 minutes or until heated through.

Prepare the Bowl Base: In serving bowls, layer the cooked brown rice or quinoa at the bottom. This will serve as the base for your bowl.

Add the Turkey: Once the turkey is evenly heated, pile a generous portion on top of the rice or quinoa.

Layer Roasted Vegetables: Add the roasted vegetables on top of the turkey. If you don’t have pre-roasted veggies, you can quickly sauté some in the skillet for a couple of minutes.

Spoon on the Cranberry Sauce: Drizzle or spoon the cranberry sauce over the entire bowl for a burst of flavor.

Add Garnishes: Sprinkle chopped parsley or cilantro over the bowl for freshness. If desired, add some shredded cheese on top and let it melt slightly from the heat of the turkey.

Final Touches: If you like, garnish with slices of avocado for an extra creamy texture.

Serve and Enjoy: Serve immediately while warm, and enjoy your Quick Thanksgiving Leftover Turkey Bowls!
