Quick Teriyaki Shrimp and Rice Bowl

1 lb (450g) large shrimp, peeled and deveined

1 cup uncooked jasmine or basmati rice

1 cup water or low-sodium chicken broth

1/4 cup teriyaki sauce

2 tablespoons soy sauce

1 tablespoon sesame oil

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1/2 cup bell pepper, thinly sliced (any color)

1/2 cup broccoli florets

2 green onions, sliced (for garnish)

1 tablespoon sesame seeds (for garnish)

Salt and pepper to taste

Instructions
 

Cook the Rice: In a medium saucepan, combine rice and water (or chicken broth). Bring to a boil, then reduce heat to low, cover, and simmer for about 15 minutes or until rice is tender and water is absorbed. Remove from heat and let sit covered for 5 minutes.

    Prepare the Shrimp: While the rice cooks, heat sesame oil in a large skillet or wok over medium heat. Add minced garlic and grated ginger, stirring for 30 seconds until fragrant.

      Add Shrimp: Add the shrimp to the skillet. Season with salt and pepper. Cook for about 3-4 minutes until they turn pink and opaque, stirring occasionally.

        Stir in Vegetables: Add the sliced bell pepper and broccoli florets to the skillet. Pour in the teriyaki sauce and soy sauce. Stir-fry for an additional 3-4 minutes, allowing the vegetables to soften slightly and everything to heat through.

          Combine: Fluff the cooked rice with a fork and divide it into bowls. Top each bowl with the teriyaki shrimp and vegetables mixture.
