Ingredients
  

1 cup canned chickpeas, drained and rinsed

1 cup canned black beans, drained and rinsed

1 cup cherry tomatoes, halved

1 small red bell pepper, diced

1 small cucumber, diced

1/4 red onion, finely chopped

1 avocado, diced

1/4 cup fresh parsley, chopped

1/4 cup olive oil

2 tablespoons apple cider vinegar

1 teaspoon Dijon mustard

Salt and black pepper, to taste

Juice of 1 lime

1 teaspoon cumin (optional)

Crumbled feta cheese, for garnish (optional)

Instructions
 

In a large mixing bowl, combine the chickpeas, black beans, cherry tomatoes, red bell pepper, cucumber, and red onion. Toss gently to mix.

    In a small bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, lime juice, cumin (if using), salt, and black pepper until well emulsified.

      Pour the dressing over the bean mixture, and toss everything together until well-coated.

        Gently fold in the diced avocado and fresh parsley to the salad.

          Taste and adjust seasoning as desired, adding more salt, pepper, or lime juice if needed.

            If using, sprinkle crumbled feta cheese on top before serving.

              Serve immediately or chill in the refrigerator for 30 minutes to enhance the flavors. Enjoy!
