Quick Lemon Garlic Shrimp and Zucchini Noodles

Ingredients
  

1 lb medium shrimp, peeled and deveined

2 medium zucchinis, spiralized into noodles (zoodles)

4 cloves garlic, minced

1/4 cup fresh lemon juice (about 2 lemons)

Zest of 1 lemon

2 tablespoons olive oil

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

2 tablespoons fresh parsley, chopped (for garnish)

Grated Parmesan cheese (optional, for serving)

Instructions
 

Prepare the Zucchini Noodles:

    If you haven’t done so already, spiralize the zucchinis using a spiralizer to create zoodles. Lightly salt them and let them sit in a colander for about 10 minutes to release excess moisture. Pat dry with a paper towel.

      Cook the Shrimp:

        In a large skillet over medium-high heat, add 2 tablespoons of olive oil. Once the oil is shimmering, add the minced garlic and sauté for about 30 seconds until fragrant (be careful not to burn the garlic).

          Add the Shrimp:

            Add the shrimp to the skillet and season with salt, pepper, and red pepper flakes if desired. Cook for 2-3 minutes on each side, or until the shrimp are pink and opaque.

              Add the Lemon Juice and Zoodles:

                Pour in the fresh lemon juice and lemon zest, stirring to combine. Gently fold in the spiralized zucchini noodles, tossing them with the shrimp and sauce for about 2-3 minutes, just until the zoodles are slightly softened but still al dente.

                  Serve:

                    Remove from heat and garnish with chopped parsley. Serve hot, with an optional sprinkle of grated Parmesan cheese if desired. Enjoy!
