3 green onions, sliced

2 cloves garlic, minced

1 tablespoon soy sauce (or tamari for gluten-free)

1 teaspoon oyster sauce (optional for depth)

Salt and pepper, to taste

Fresh coriander for garnish (optional)

Lime wedges (for serving)

Instructions
 

Prep the Ingredients: Ensure your cooked rice is cold and separated. This prevents it from becoming mushy. Gather all your other ingredients.

    Heat the Pan: In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.

      Scramble the Eggs: Add the beaten eggs to the skillet and stir gently. Cook until just set, then remove them from the pan and set aside.
