Ingredients

2 tablespoons olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

1 (28 oz) can crushed tomatoes

2 cups vegetable broth (or chicken broth)

1 teaspoon sugar (optional, to balance acidity)

Salt and pepper, to taste

1 teaspoon dried basil (or 1/4 cup fresh basil leaves, chopped)

1/2 cup heavy cream or coconut milk (for a vegan option)

Fresh basil leaves, for garnish

Instructions

Sauté Aromatics: In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional minute until fragrant.

Add Tomatoes and Broth: Pour in the crushed tomatoes and vegetable broth. If desired, stir in the sugar to balance the acidity of the tomatoes. Season with salt, pepper, and dried basil (or fresh if using). Bring the mixture to a gentle simmer.

Simmer and Blend: Allow the soup to simmer for about 15 minutes, stirring occasionally. After simmering, remove the pot from heat. If you prefer a smooth texture, carefully blend the soup with an immersion blender until smooth. Alternatively, you can transfer it in batches to a regular blender.

Finish with Cream: Return the blended soup to heat, and stir in the heavy cream or coconut milk. Heat just until warmed through. Adjust seasoning to taste with additional salt and pepper if needed.

Serve: Ladle the soup into bowls, garnish with fresh basil leaves, and drizzle with additional cream for a beautiful presentation. Enjoy with crusty bread or a grilled cheese sandwich!
