Ingredients

8 oz fettuccine pasta

2 boneless, skinless chicken breasts

1 cup frozen peas

2 tablespoons olive oil

3 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta: Boil a large pot of salted water and cook the fettuccine according to package instructions until al dente. In the last 2 minutes of cooking, add the frozen peas to the pot. Drain and set aside, reserving about ½ cup of pasta water.

Prepare the Chicken: While the pasta is cooking, season the chicken breasts with salt, pepper, and Italian seasoning on both sides.

Sauté the Chicken: In a large skillet, heat olive oil over medium heat. Add the chicken breasts and cook for about 5-7 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and let it rest for a few minutes before slicing it into strips.

Make the Alfredo Sauce: In the same skillet, add minced garlic and sauté for about 1 minute, until fragrant. Pour in the heavy cream, reducing the heat to low, and bring it to a gentle simmer. Gradually whisk in the grated Parmesan cheese until melted and smooth. If the sauce is too thick, add some reserved pasta water to achieve your desired consistency.

Combine Ingredients: Add the cooked pasta and peas to the Alfredo sauce, tossing to coat. Add the sliced chicken on top and gently mix everything together.

Serve and Garnish: Plate the creamy chicken Alfredo pasta and sprinkle with chopped parsley for a fresh finish. Enjoy your Quick Chicken Alfredo Delight!
