Quick Beef and Bean Chili for Busy Nights

Ingredients
  

1 lb ground beef (preferably lean)

1 medium onion, diced

3 cloves garlic, minced

1 can (14 oz) diced tomatoes (with juices)

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 cup beef broth

2 tablespoons chili powder

1 tablespoon ground cumin

1 teaspoon smoked paprika

½ teaspoon cayenne pepper (adjust to taste)

Salt and pepper, to taste

1 tablespoon olive oil

Optional toppings: shredded cheese, sour cream, chopped green onions, cilantro

Instructions
 

Sauté the Aromatics: In a large pot or dutch oven, heat the olive oil over medium-high heat. Add the diced onion and sauté for 2-3 minutes until translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

    Brown the Beef: Push the onions and garlic to one side of the pot and add the ground beef. Cook, breaking it apart with a spoon, until browned and cooked through (about 5-7 minutes). Drain any excess fat if necessary.

      Combine Ingredients: Once the beef is cooked, stir in the diced tomatoes (with juices), kidney beans, black beans, and beef broth. Mix well to combine all ingredients.

        Season the Chili: Add chili powder, ground cumin, smoked paprika, cayenne pepper, salt, and pepper. Stir until well mixed.

          Simmer: Bring the chili to a gentle boil over medium-high heat, then reduce the heat to low. Cover and let it simmer for about 15-20 minutes, stirring occasionally so it doesn’t stick to the bottom of the pot.

            Taste and Adjust: After simmering, taste the chili and adjust seasonings if needed. If you like it spicier, add more cayenne or a pinch of hot sauce.
