1 ½ cups all-purpose flour

1 teaspoon baking powder

½ teaspoon baking soda

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

½ teaspoon ground ginger

¼ teaspoon ground cloves

½ teaspoon salt

1 cup sugar

½ cup vegetable oil or melted coconut oil

2 large eggs

1 cup canned pumpkin puree (not pumpkin pie filling)

1 teaspoon vanilla extract

½ cup chopped walnuts or pecans (optional)

½ cup chocolate chips (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 350°F (175°C) and line a muffin tin with paper liners or lightly grease it.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, ginger, cloves, and salt until well combined. Set this bowl aside.

      Combine Wet Ingredients: In another bowl, mix together the sugar and oil until well blended. Add in the eggs, pumpkin puree, and vanilla extract. Whisk until smooth and creamy.

        Combine Mixtures: Gradually fold the dry ingredients into the wet mixture. Stir gently until just combined; do not overmix. If desired, fold in the walnuts or pecans and chocolate chips.

          Fill Muffin Tin: Spoon the batter into the prepared muffin tin, filling each cup about ⅔ full.

            Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

              Cool: Remove the muffins from the oven and allow them to cool in the pan for about 5 minutes. Then, transfer them to a wire rack to cool completely.
