2 boneless, skinless chicken breasts

1 cup canned pumpkin puree

1 cup chicken broth

1 medium onion, finely chopped

3 cloves garlic, minced

2 tablespoons fresh sage, chopped (or 1 tablespoon dried sage)

1 teaspoon ground cinnamon

½ teaspoon nutmeg

1 cup heavy cream

2 tablespoons olive oil

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions
 

Prep the Chicken: Season the chicken breasts with salt and pepper on both sides.

    Sear the Chicken: In a large skillet, heat olive oil over medium heat. Add the chicken breasts and sear until golden brown (about 5-7 minutes per side). Remove the chicken and set aside.

      Sauté Aromatics: In the same skillet, add the chopped onion and cook until translucent, about 3-4 minutes. Add the minced garlic and sauté for another minute until fragrant.

        Make the Sauce: Stir in the pumpkin puree, chicken broth, sage, cinnamon, and nutmeg. Mix well until combined and let it simmer for about 3-5 minutes to blend the flavors.

          Add Cream: Slowly pour in the heavy cream while stirring. Return the chicken to the skillet and spoon some of the sauce over the top.

            Simmer: Cover the skillet and let it simmer on low heat for 15-20 minutes, until the chicken is cooked through (internal temperature should be 165°F).

              Serve: Once cooked, remove from heat and let it rest for a few minutes. Slice the chicken and serve it topped with the creamy pumpkin sage sauce, garnished with fresh parsley if desired.
