9 lasagna noodles

2 cups kale, chopped (stems removed)

1 cup pumpkin puree (canned or homemade)

1 cup ricotta cheese

1 teaspoon nutmeg

1 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup shredded mozzarella cheese, divided

1/4 cup grated Parmesan cheese

2 cups marinara sauce (store-bought or homemade)

Olive oil, for sautéing

Fresh basil, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Noodles: In a large pot, bring salted water to a boil. Cook the lasagna noodles according to package instructions until al dente. Drain and lay them flat on a clean kitchen towel.

      Sauté the Kale: In a skillet, heat a tablespoon of olive oil over medium heat. Add the chopped kale and sauté for about 3-4 minutes, until wilted and tender. Remove from heat and let cool slightly.

        Prepare the Filling: In a mixing bowl, combine the pumpkin puree, ricotta cheese, sautéed kale, nutmeg, garlic powder, salt, and black pepper. Mix until well combined. Fold in 1/2 cup of mozzarella cheese.

          Assemble the Roll-Ups: Spread a spoonful of marinara sauce at the bottom of a 9x13 inch baking dish. Take a lasagna noodle, place 2-3 tablespoons of the pumpkin-kale mixture along one end, and roll it up tightly. Place the roll seam-side down in the baking dish. Repeat with remaining noodles and filling.

            Add Sauce and Cheese: Once all roll-ups are assembled, pour remaining marinara sauce over the top. Sprinkle the remaining mozzarella and Parmesan cheese evenly on top.

              Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.
