Pumpkin Cream Cheese Mini Muffins

1 cup all-purpose flour

1/2 cup sugar

1/2 tsp baking powder

1/2 tsp baking soda

1/2 tsp cinnamon

1/4 tsp nutmeg

1/4 tsp ginger

1/4 tsp salt

1/2 cup canned pumpkin puree

1/4 cup vegetable oil

1 large egg

1 tsp vanilla extract

4 oz cream cheese, softened

1/4 cup powdered sugar

1/2 tsp lemon juice

Optional: chopped pecans or walnuts for topping

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a mini muffin tin with paper liners or grease it with cooking spray.

    Dry Ingredients: In a medium bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt until well combined.

      Wet Ingredients: In a separate large bowl, mix together the pumpkin puree, vegetable oil, egg, and vanilla extract until smooth.

        Combine Mixtures: Gradually add the dry ingredients into the wet ingredients, stirring until just combined. Be careful not to overmix; a few lumps are okay.

          Prepare Cream Cheese Filling: In a small bowl, beat together the softened cream cheese, powdered sugar, and lemon juice until creamy and smooth.

            Fill Muffin Tins: Using a spoon or small ice cream scoop, fill each mini muffin cup about 1/3 full with the pumpkin batter. Then, add about 1 teaspoon of the cream cheese mixture on top of the batter. Finally, cover the cream cheese with additional pumpkin batter until each cup is roughly 2/3 full.

              Add Toppings: If desired, sprinkle some chopped pecans or walnuts on top of each muffin for added crunch and flavor.

                Bake: Place the muffin tin in the preheated oven and bake for 15-18 minutes, or until a toothpick inserted into the center comes out clean.
