Protein-Packed Chicken Alfredo Zucchini Noodles

2 large chicken breasts, diced

4 medium zucchini (zoodles)

2 tablespoons olive oil

3 cloves garlic, minced

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh basil leaves for garnish

Optional: Red pepper flakes for a little heat

Prepare the Zoodles: Using a spiralizer, create zucchini noodles (zoodles) from the zucchini. Place them in a colander and sprinkle with a little salt. Let them sit for about 10 minutes to draw out moisture, then pat dry with paper towels.

    Cook the Chicken: In a large skillet, heat olive oil over medium heat. Add the diced chicken breasts and season with salt, pepper, and Italian seasoning. Cook for about 6-8 minutes or until the chicken is cooked through and no longer pink in the center. Remove the chicken from the skillet and set aside.

      Make the Alfredo Sauce: In the same skillet, reduce heat to medium-low. Add minced garlic and sauté for about 30 seconds until fragrant. Pour in the heavy cream, stirring to combine. Allow it to simmer gently for 2-3 minutes.

        Incorporate the Cheese: Gradually whisk in the grated Parmesan cheese until the cheese is melted and the sauce is smooth. Add salt, pepper, and additional Italian seasoning to taste. If you like some heat, sprinkle in red pepper flakes now.

          Combine Chicken and Zoodles: Add the cooked chicken back into the skillet, then add the zoodles. Toss everything together gently, making sure the zoodles are evenly coated with the Alfredo sauce. Cook for an additional 2-3 minutes, just until the zoodles are heated through.
