Ingredients

4 tablespoons all-purpose flour

3 tablespoons granulated sugar

1/8 teaspoon baking powder

1/8 teaspoon baking soda

Pinch of salt

3 tablespoons milk

1 tablespoon vegetable oil

1/4 teaspoon vanilla extract

2-3 pineapple rings (canned or fresh, plus extra for garnish)

Maraschino cherries (one per serving, for garnish)

1 tablespoon brown sugar

Instructions

Prepare the Mug: Select a microwave-safe mug (approximately 12-ounce capacity). Lightly grease the inside with a touch of vegetable oil or butter to prevent sticking.

Create the Base: In a small bowl, combine the flour, granulated sugar, baking powder, baking soda, and salt. Mix together until well blended.

Mix Wet Ingredients: In another bowl, whisk together the milk, vegetable oil, and vanilla extract until combined.

Combine Mixtures: Pour the wet ingredients into the dry mixture. Stir gently until just combined, being careful not to over-mix. The batter should be smooth but may be slightly lumpy.

Prepare Pineapple Topping: Place one pineapple ring at the bottom of your greased mug. Sprinkle the brown sugar over the pineapple. If you have extra pineapple, you can cut it into small pieces and add some around the side of the mug.

Add the Batter: Carefully spoon the cake batter over the pineapple in the mug. Ensure it covers the pineapple evenly and doesn’t overflow.

Microwave Time: Place the mug in the microwave and cook on high for about 1 minute and 10 seconds. Cooking times may vary based on your microwave wattage, so keep an eye on it. The cake should rise and look set in the middle but still be moist.

Cool Slightly: Allow the mug cake to cool for about 2 minutes. It will finish setting as it cools.

Serve: To serve, gently run a knife around the inside of the mug and invert the cake onto a plate. Top with a maraschino cherry and extra pineapple, if desired. Enjoy your tropical treat!
