1 ripe banana

1 cup unsweetened coconut milk (or almond milk)

2 tablespoons chia seeds

1 tablespoon honey or maple syrup (optional for sweetness)

½ teaspoon vanilla extract

Fresh fruit for topping (sliced bananas, berries, kiwi)

Granola or nut mix for crunch

Coconut flakes for garnish

Fresh mint leaves for garnish

Instructions
 

In a blender, combine the fresh pineapple chunks, ripe banana, coconut milk, chia seeds, honey (if using), and vanilla extract.

    Blend on high until smooth and creamy, stopping to scrape down the sides if necessary. Adjust sweetness by adding more honey or syrup as desired.

      Once blended, let the mixture sit for about 5 minutes to allow the chia seeds to absorb some liquid and thicken the smoothie.
