Ingredients

1 lb (450g) large shrimp, peeled and deveined

1 cup fresh pineapple, cut into bite-sized chunks

1 red bell pepper, cut into squares

1 red onion, cut into chunks

2 tablespoons honey

3 tablespoons soy sauce

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon lime juice (fresh squeezed)

1 teaspoon sesame oil

1/2 teaspoon red pepper flakes (optional, for spice)

Salt and black pepper, to taste

Skewers (if using wooden skewers, soak in water for 30 minutes before use)

Instructions

Marinate the Shrimp: In a large bowl, whisk together honey, soy sauce, garlic, ginger, lime juice, sesame oil, red pepper flakes, salt, and black pepper. Add the shrimp and toss until well coated. Cover and refrigerate for at least 30 minutes, allowing the shrimp to absorb the flavors.

Prepare the Skewers: If using wooden skewers, ensure they have been soaked. Thread the marinated shrimp, pineapple chunks, red bell pepper squares, and onion chunks onto the skewers, alternating between the ingredients for a colorful presentation.

Preheat the Grill: Preheat your grill to medium-high heat (about 375°F to 400°F or 190°C to 200°C).

Grill the Skewers: Place the skewers on the grill and cook for 3-4 minutes on each side, or until the shrimp are pink and cooked through and the pineapple starts to caramelize. Make sure to turn the skewers occasionally for even cooking.

Serve: Once cooked, carefully remove the skewers from the grill. Serve hot with a sprinkle of chopped cilantro or parsley for an added burst of flavor, and lime wedges on the side for squeezing over.

Enjoy: Dive into these vibrant, tropical skewers that offer a burst of flavors with every bite!
