Ingredients

For the Meatballs:

1 lb (450g) ground beef or ground turkey

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1/4 cup finely chopped onion

2 cloves garlic, minced

1 large egg

1 tbsp soy sauce

1 tsp Worcestershire sauce

1/2 tsp black pepper

1/2 tsp salt

1/2 tsp crushed red pepper flakes (optional for heat)

For the Pineapple BBQ Sauce:

1 cup crushed pineapple (drained, with juice reserved)

1 cup BBQ sauce (your favorite brand)

2 tbsp honey

1 tbsp soy sauce

1 tsp ground ginger

1/2 tsp garlic powder

1/4 tsp black pepper

Instructions

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

Prepare the Meatballs: In a large mixing bowl, combine the ground meat, breadcrumbs, Parmesan cheese, onion, garlic, egg, soy sauce, Worcestershire sauce, black pepper, salt, and red pepper flakes (if using). Mix until all ingredients are well incorporated, being careful not to overmix.

Form the Meatballs: With your hands, shape the mixture into 1-inch meatballs and place them on the prepared baking sheet.

Bake the Meatballs: Bake in the preheated oven for about 20 minutes, or until golden brown and cooked through (internal temperature should reach 165°F/74°C).

Make the Pineapple BBQ Sauce: In a small saucepan over medium heat, combine the crushed pineapple (with reserved juice), BBQ sauce, honey, soy sauce, ground ginger, garlic powder, and black pepper. Stir well and bring to a gentle simmer. Cook for 5-7 minutes, allowing the flavors to meld and the sauce to thicken slightly.

Combine Meatballs and Sauce: Once the meatballs are done baking, transfer them into a large mixing bowl or a skillet. Pour the Pineapple BBQ sauce over the meatballs, gently tossing them to ensure they are evenly coated in the sauce.

Serve: Serve warm as an appetizer, main dish, or over rice for a complete meal. Garnish with chopped green onions or fresh cilantro for added freshness. Enjoy your tropical feast!
