Ingredients

For the Meatballs:

1 lb (450g) ground beef or turkey

1/2 cup breadcrumbs (preferably seasoned)

1/4 cup finely chopped green onions

2 cloves garlic, minced

1 large egg

1 teaspoon soy sauce

1 teaspoon Worcestershire sauce

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon smoked paprika

For the Pineapple BBQ Sauce:

1 cup pineapple juice

1/2 cup ketchup

1/4 cup brown sugar

1/4 cup soy sauce

1 tablespoon apple cider vinegar

1 tablespoon cornstarch (mixed with 1 tablespoon water)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon chili flakes (optional for heat)

Instructions

Preheat the oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Make the meatball mixture: In a large mixing bowl, combine the ground beef or turkey, breadcrumbs, green onions, minced garlic, egg, soy sauce, Worcestershire sauce, salt, pepper, and smoked paprika. Mix until fully incorporated but do not overmix.

Form the meatballs: Using your hands, form the mixture into 1-inch meatballs and place them on the prepared baking sheet. This recipe should yield about 20 meatballs.

Bake the meatballs: Bake the meatballs in the preheated oven for 20-25 minutes, or until they are browned and cooked through.

Prepare the BBQ Sauce: While the meatballs are baking, combine the pineapple juice, ketchup, brown sugar, soy sauce, apple cider vinegar, garlic powder, onion powder, and chili flakes in a saucepan. Bring the mixture to a simmer over medium heat, stirring occasionally.

Thicken the sauce: Once the sauce is simmering, add the cornstarch mixed with water and stir until the sauce thickens, about 2-3 minutes. Remove from heat.

Combine meatballs and sauce: Once the meatballs are done baking, transfer them to the saucepan with the pineapple BBQ sauce. Gently toss the meatballs in the sauce until they are well coated.

Serve: Serve the Pineapple BBQ Meatballs warm over rice, in a sandwich, or as an appetizer with toothpicks. Garnish with additional chopped green onions or fresh pineapple chunks if desired.
