For the Crust:

1 ½ cups graham cracker crumbs

½ cup unsweetened cocoa powder

½ cup granulated sugar

½ cup unsalted butter, melted

1 teaspoon vanilla extract

For the Cheesecake Filling:

24 ounces (3 packages) cream cheese, room temperature

1 cup granulated sugar

1 teaspoon vanilla extract

3 large eggs

½ cup sour cream

½ cup heavy cream

Zest of 1 lemon

For the Topping:

Fresh berries (strawberries, blueberries, or raspberries)

Whipped cream (optional)

Instructions
 

Prepare the Crust: Preheat your oven to 350°F (175°C). In a medium bowl, combine the graham cracker crumbs, cocoa powder, and granulated sugar. Stir in the melted butter and vanilla extract until the mixture resembles wet sand. Press firmly into the bottom of a greased 9x13-inch baking dish. Bake for 10 minutes, then let cool.

    Make the Cheesecake Filling: In a large mixing bowl, beat the cream cheese with an electric mixer until smooth and creamy. Gradually add in the 1 cup sugar and continue to beat until well combined. Mix in the vanilla extract, followed by the eggs one at a time, ensuring to mix well after each addition.

      Incorporate Sour Cream and Heavy Cream: Add the sour cream and heavy cream to the mixture and beat until smooth. Finally, fold in the lemon zest to enhance the flavor.

        Assemble The Cheesecake Bars: Pour the cheesecake filling over the cooled crust, smoothing it out evenly. Bake in the preheated oven for about 25–30 minutes, or until the edges are set and the center is slightly jiggly (it will firm up as it cools).

          Cool and Chill: Once baked, turn off the oven and crack the oven door just slightly, allowing the cheesecake to cool gradually for about an hour. Then, refrigerate the bars for at least 4 hours, or overnight for best results.

            Slice and Serve: Once chilled, use a sharp knife to cut the cheesecake into bars. Serve with fresh berries on top and a dollop of whipped cream, if desired.
