Pesto Chicken and Veggie Wraps

2 large tortillas (whole wheat or spinach)

1 cup cooked chicken breast, shredded or sliced

1/2 cup pesto sauce (store-bought or homemade)

1 cup fresh spinach leaves

1/2 cup bell peppers, thinly sliced (any color)

1/2 cup cucumber, thinly sliced

1/4 cup cherry tomatoes, halved

1/4 cup feta cheese, crumbled (optional)

Salt and pepper to taste

Olive oil (for grilling, optional)

Prepare the Chicken: In a mixing bowl, combine the cooked chicken with the pesto sauce. Toss until the chicken is well-coated.

    Prep the Veggies: Wash and slice all the vegetables. If using, crumble the feta cheese and set aside.

      Assemble the Wraps: On each tortilla, lay down a handful of fresh spinach leaves. Then, layer on the pesto chicken mix, followed by the sliced bell peppers, cucumbers, cherry tomatoes, and any feta cheese.

        Season: Lightly sprinkle salt and pepper over the contents of each wrap, adjusting to your taste.

          Wrap It Up: Carefully fold in the sides of the tortilla and then roll it tightly from the bottom up, like a burrito.

            Optional Grilling: If you prefer a warm wrap, preheat a non-stick skillet over medium heat. Brush the outside of the wrap with a little olive oil, then grill for about 2-3 minutes per side, or until golden brown and heated through.
