2 cups all-purpose flour

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

½ teaspoon salt

½ cup unsalted butter, softened

¾ cup brown sugar, packed

½ cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 cup buttermilk (or 1 cup milk mixed with 1 tablespoon lemon juice)

1 ½ cups peeled and diced apples (about 2 medium apples)

½ cup chopped walnuts or pecans (optional)

For the Cinnamon Sugar Topping:

2 tablespoons granulated sugar

1 teaspoon ground cinnamon

2 tablespoons melted butter

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it with cooking spray. Set aside.

    Prepare the Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt. Set aside.

      Cream the Butter and Sugars: In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together until creamy and smooth, about 2-3 minutes.

        Incorporate Eggs and Vanilla: Add the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract until well combined.

          Add Buttermilk: Gradually pour in the buttermilk, mixing until incorporated.

            Combine Wet and Dry Ingredients: Slowly add the dry ingredient mixture to the wet ingredients, stirring gently until just combined. Be careful not to overmix; it's okay if there are a few lumps.

              Fold in Apples and Nuts: Gently fold in the diced apples and nuts (if using) until evenly distributed throughout the batter.

                Make the Cinnamon Sugar Topping: In a small bowl, mix together the granulated sugar and cinnamon. Brush the tops of each muffin with melted butter, then sprinkle the cinnamon sugar mixture generously over each muffin.

                  Fill the Muffin Tin: Divide the batter evenly among the muffin cups, filling each about ¾ full.

                    Bake: Place the muffin tin in the preheated oven and bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

                      Cool: Remove the muffins from the oven and let them cool in the tin for about 5 minutes. Then transfer them to a wire rack to cool completely.
