Peppery Garlic Parmesan Polenta

1 cup yellow cornmeal (polenta)

4 cups vegetable broth

2 cloves garlic, minced

1/2 cup grated Parmesan cheese

2 tablespoons unsalted butter

1 teaspoon black pepper (or more to taste)

1/2 teaspoon salt (adjust to taste)

Fresh parsley, chopped (for garnish)

Optional: Red pepper flakes for extra heat

Prepare the Broth: In a large saucepan, bring the vegetable broth to a gentle simmer over medium heat. If desired, you can add a pinch of salt for extra flavor.

    Mix the Polenta: Gradually whisk in the cornmeal, stirring constantly to avoid lumps. Continue whisking as the polenta begins to thicken (after about 5 minutes).

      Add Garlic and Butter: Once the polenta has thickened (it should start pulling away from the sides of the pan), stir in the minced garlic and unsalted butter. Keep stirring for another 2-3 minutes until the garlic is fragrant.
