Peanut Butter Oatmeal Cookies

Ingredients
  

1 cup natural creamy peanut butter

1 cup rolled oats

1/2 cup brown sugar, packed

1/2 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup chocolate chips or raisins (optional)

1/2 cup chopped nuts (walnuts or pecans, optional)

Instructions
 

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, combine the peanut butter, brown sugar, and granulated sugar, and mix well until creamy.

      Add in the egg and vanilla extract. Mix until you achieve a smooth consistency.

        In a separate bowl, whisk together the rolled oats, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, stirring until fully incorporated.

          If you’re adding chocolate chips and/or chopped nuts, fold them into the batter gently.

            Using a cookie scoop or tablespoon, drop rounded balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.

              Flatten each ball slightly with the back of a fork or your fingers.

                Bake in the preheated oven for 10-12 minutes or until the edges are golden brown. The centers might look a little soft but will firm up as they cool.

                  Remove from the oven and let the cookies cool on the baking sheet for about 5 minutes, then transfer to a wire rack to cool completely.
