1 ½ cups rolled oats

1 cup crispy rice cereal

½ cup unsweetened peanut butter

½ cup honey

¼ cup brown sugar, packed

½ teaspoon vanilla extract

½ teaspoon cinnamon (optional)

¼ teaspoon salt

½ cup mini chocolate chips (optional)

½ cup chopped nuts or seeds (optional for added crunch)

Instructions
 

Prepare the Baking Dish: Line an 8x8 inch baking dish with parchment paper, leaving some overhang on the sides for easy removal later. Lightly grease the parchment with a bit of coconut oil or cooking spray.

    Mix Dry Ingredients: In a large mixing bowl, combine rolled oats and crispy rice cereal. If you’re adding chopped nuts or seeds, mix them in at this stage.

      Heat Wet Ingredients: In a small saucepan over medium-low heat, combine peanut butter, honey, and brown sugar. Stir constantly until the mixture is smooth and well combined, about 3 to 5 minutes. Remove from heat and stir in the vanilla extract, cinnamon, and salt.

        Combine Mixtures: Pour the warm peanut butter mixture into the bowl with the dry ingredients. Stir well with a spatula until all the dry ingredients are evenly coated. If using mini chocolate chips, mix them in at this point.

          Transfer to Baking Dish: Pour the mixture into the prepared baking dish. Use a spatula or your hands (with slightly wet hands to prevent sticking) to press the mixture down firmly and evenly into the dish.

            Chill: Place the baking dish in the refrigerator for at least 1 hour to allow the bars to set. This step is crucial for achieving a firm texture.

              Cut into Bars: Once set, lift the mixture out of the baking dish using the parchment paper overhang. Use a sharp knife to cut into bars of your desired size.

                Store: Store the bars in an airtight container at room temperature for up to a week, or refrigerated for up to two weeks.
