Peanut Butter Banana Oatmeal Cookies

1 cup rolled oats

1 ripe banana, mashed

1/2 cup natural peanut butter

1/4 cup honey or maple syrup

1/2 teaspoon vanilla extract

1/2 teaspoon baking soda

1/4 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup dark chocolate chips (optional)

1/4 cup chopped walnuts or pecans (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Combine Wet Ingredients: In a large mixing bowl, mash the ripe banana until smooth. Add the peanut butter, honey or maple syrup, and vanilla extract. Stir until well combined.

      Mix Dry Ingredients: In another bowl, mix together the rolled oats, baking soda, cinnamon, and salt.

        Combine Mixtures: Gradually add the dry mixture to the wet mixture, stirring until just combined. If using, fold in the dark chocolate chips and nuts until evenly distributed.

          Shape the Cookies: Using a tablespoon, scoop out the mixture and drop it onto the prepared baking sheet. Flatten them slightly with the back of the spoon, as they won't spread much during baking.

            Bake: Place the baking sheet in the oven and bake for 10-12 minutes or until the edges are lightly golden.

              Cool and Enjoy: Remove the cookies from the oven and let them cool on the baking sheet for about 5 minutes, then transfer to a wire rack to cool completely.
