Ingredients

2 ripe bananas, mashed

1 cup creamy peanut butter (or almond butter)

1/2 cup honey or maple syrup

1 cup rolled oats

1/2 cup whole wheat flour

1 teaspoon vanilla extract

1 teaspoon baking powder

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup dark chocolate chips (optional)

1/4 cup chopped nuts (e.g., walnuts or almonds, optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper, leaving some extra overhang for easy removal.

Mix the Wet Ingredients: In a large mixing bowl, combine the mashed bananas, peanut butter, honey (or maple syrup), and vanilla extract. Stir until smooth and well-combined.

Combine Dry Ingredients: In a separate bowl, whisk together the rolled oats, whole wheat flour, baking powder, cinnamon, and salt. Ensure there are no lumps.

Combine Wet and Dry: Gradually add the dry ingredient mixture to the wet ingredients, stirring until just combined. Be careful not to overmix.

Add Optional Ingredients: If using, fold in the dark chocolate chips and chopped nuts until evenly distributed throughout the batter.

Transfer to Pan: Pour the mixture into the prepared baking pan and spread it evenly using a spatula. You can press it down gently to make sure it’s compact.

Bake the Bars: Place the pan in the preheated oven and bake for 20-25 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.

Cool: Once baked, remove the pan from the oven and let it cool in the pan for about 10 minutes. Then lift the bars out using the parchment paper and let them cool completely on a wire rack.

Cut and Serve: Once cool, cut into squares or bars. Enjoy your delicious Peanut Butter Banana Oat Bars as a healthy snack or breakfast option!
