Peach Veggie Stir Fry

2 ripe peaches, sliced

1 red bell pepper, julienned

1 cup snap peas, trimmed

1 zucchini, sliced into half-moons

1 medium carrot, julienned

3 green onions, chopped

3 cloves garlic, minced

1-inch piece ginger, grated

3 tablespoons soy sauce or tamari (for gluten-free)

1 tablespoon rice vinegar

1 tablespoon honey or maple syrup

2 tablespoons sesame oil (divided)

1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

Sesame seeds for garnish

Fresh basil or cilantro for garnish

Instructions
 

Prepare the ingredients: Begin by washing all the vegetables and fruits thoroughly. Slice the peaches, bell pepper, zucchini, and carrot as described. Trim the snap peas and chop the green onions.

    Make the stir-fry sauce: In a small bowl, whisk together the soy sauce, rice vinegar, honey (or maple syrup), and half of the sesame oil. Set aside.

      Heat the skillet: In a large wok or deep skillet, heat the remaining sesame oil over medium-high heat.

        Sauté aromatics: Add the minced garlic and grated ginger to the hot oil. Stir-fry for about 30 seconds until fragrant, being careful not to burn them.

          Cook the veggies: Add the bell pepper, carrot, and zucchini to the wok. Stir-fry for about 4-5 minutes until just tender. Then, add the snap peas and peaches. Continue to stir-fry for an additional 2-3 minutes.

            Add the sauce: Pour the prepared stir-fry sauce over the vegetables. Stir well to coat all the ingredients.

              Thicken the sauce: Slowly add the cornstarch mixture to the skillet, stirring continuously until the sauce thickens and becomes glossy. Should take about 1-2 minutes.

                Garnish and serve: Remove from heat. Top the stir-fry with sesame seeds and garnish with fresh basil or cilantro before serving.
