Peach Glazed Chicken Thighs

4 bone-in, skin-on chicken thighs

2 ripe peaches, pitted and chopped

1/4 cup peach preserves

1/4 cup soy sauce

2 tablespoons apple cider vinegar

1 tablespoon honey

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1/2 teaspoon black pepper

1 teaspoon smoked paprika

2 tablespoons olive oil

Fresh thyme or basil for garnish (optional)

Prepare the Marinade: In a blender or food processor, combine the chopped peaches, peach preserves, soy sauce, apple cider vinegar, honey, minced garlic, grated ginger, black pepper, and smoked paprika. Blend until smooth and set aside about 1/3 of the mixture for glazing later.

    Marinate the Chicken: Place the chicken thighs in a large resealable plastic bag or a shallow dish. Pour the remaining marinade over the chicken, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, preferably 3-4 hours or overnight for more flavor.

      Preheat the Oven: Preheat your oven to 425°F (220°C).

        Sear the Chicken: In a large oven-safe skillet, heat the olive oil over medium-high heat. Remove the chicken thighs from the marinade, allowing any excess to drip off. Sear the chicken thighs, skin side down, for about 5-6 minutes until golden brown and crispy. Flip the chicken and sear the other side for an additional 3-4 minutes.

          Glaze and Bake: Brush the reserved peach glaze over the chicken thighs. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and is cooked through.
