Ingredients
  

1 cup couscous

1 ¼ cups vegetable broth (or water)

2 ripe peaches, diced

1 cup crumbled feta cheese

1 cup cherry tomatoes, halved

½ cucumber, diced

¼ red onion, finely chopped

¼ cup fresh basil, chopped

¼ cup olive oil

2 tablespoons balsamic vinegar

Salt and pepper, to taste

Optional: ¼ cup toasted almonds for crunch

Instructions
 

Cook the Couscous: In a medium saucepan, bring the vegetable broth (or water) to a boil. Once boiling, remove from heat and stir in the couscous. Cover and let it sit for about 5 minutes or until the liquid is absorbed. Fluff with a fork and let it cool to room temperature.

    Prepare the Vegetables and Fruits: While the couscous cools, wash and chop the peaches, cherry tomatoes, cucumber, and red onion. Put them in a large mixing bowl.

      Mix the Dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper until well combined.

        Combine Ingredients: Once the couscous has cooled, add it to the bowl with the chopped peaches, tomatoes, cucumber, and red onion. Gently fold in the crumbled feta and fresh basil.

          Dress the Salad: Drizzle the prepared dressing over the salad mixture and gently toss to combine. Be careful not to break up the feta too much.

            Taste and Adjust: Give the salad a taste and adjust the seasoning with more salt, pepper, or balsamic vinegar if desired.

              Serve: If using toasted almonds, sprinkle them on top just before serving for an added crunch. Enjoy chilled or at room temperature!
