Peach & Basil Chicken Foil Packs

Ingredients
  

4 boneless, skinless chicken breasts

4 ripe peaches, sliced

1 cup cherry tomatoes, halved

1 red onion, thinly sliced

2 cloves garlic, minced

1 tablespoon fresh basil, chopped (plus extra for garnish)

2 tablespoons olive oil

1 teaspoon balsamic vinegar

Salt and pepper to taste

1 lemon, zest and juice

4 sheets of aluminum foil (12x12 inches each)

Instructions
 

Preheat the Grill/Oven: If you're using a grill, preheat it to medium-high. If you're using an oven, preheat it to 400°F (200°C).

    Prepare the Marinade: In a small bowl, combine the olive oil, minced garlic, balsamic vinegar, lemon juice, and lemon zest. Mix well and season with salt and pepper.

      Season the Chicken: Place the chicken breasts in a large mixing bowl. Pour the marinade over the chicken, ensuring each piece is well-coated. Let it marinate for 15 minutes for enhanced flavor.

        Assemble the Foil Packs: Tear off four sheets of aluminum foil. For each pack, place one marinaded chicken breast in the center. Top it with a quarter of the peach slices, cherry tomatoes, and red onion.

          Add Fresh Herbs: Sprinkle the chopped basil over the chicken and vegetables in each foil pack. Season with additional salt and pepper if desired.

            Seal the Packs: Fold the sides of the aluminum foil over the chicken and vegetables, sealing them tightly to create a closed packet.

              Cook the Foil Packs:

                - On the Grill: Place the foil packs on the grill and cook for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

                  - In the Oven: Place the foil packs on a baking sheet and bake for 25-30 minutes, or until the chicken is thoroughly cooked.
