Ingredients

1 package (9 oz) cheese-filled tortellini (fresh or frozen)

1 cup breadcrumbs (preferably panko for extra crunch)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon dried Italian herbs (oregano, basil, or thyme)

1/2 teaspoon red pepper flakes (optional, for a kick)

2 large eggs

1/4 cup all-purpose flour

Salt and pepper to taste

Vegetable oil (for frying)

Fresh parsley, chopped (for garnish)

Instructions

Cook the Tortellini: Bring a large pot of salted water to a boil. Add the tortellini and cook according to package instructions until al dente, usually about 3-5 minutes for fresh and 6-8 for frozen. Drain the tortellini and set aside to cool slightly.

Prepare the Breading Station: In one bowl, place the flour seasoned with a pinch of salt and pepper. In a second bowl, whisk the eggs until well combined. In a third bowl, combine the breadcrumbs, Parmesan cheese, garlic powder, dried herbs, and red pepper flakes (if using).

Bread the Tortellini: Take each tortellini and coat it first in the flour, shaking off the excess. Next, dip it into the egg mixture, ensuring it's fully coated. Finally, roll it in the breadcrumb mixture, pressing gently to help the coating adhere.

Heat the Oil: In a large skillet, pour enough vegetable oil to cover the bottom of the pan, about 1/4 inch deep. Heat the oil over medium heat until it shimmers but isn't smoking.

Fry the Tortellini: Carefully place the breaded tortellini into the hot oil, avoiding overcrowding the pan. Fry for 2-3 minutes on each side or until golden brown and crispy. Use a slotted spoon to flip them for even cooking.

Drain and Serve: Once fried, transfer the tortellini to a plate lined with paper towels to drain excess oil. Garnish with chopped parsley and serve immediately with your favorite marinara or aioli dipping sauce.

Enjoy: Dive into your crispy tortellini delight, enjoying every crunchy and cheesy bite!
